Maybe that's the theoretical grammar rule, but "on m'a dit qu'il est un bon prof" sounds perfectly fine to me. People say that It even sounds less weird than your second sentence. It's actually not a profession thing, it's a noun vs adjective thing.

On m'a dit que c'est une belle fille. So "c'est une belle fille" but "elle est belle". That's really the heart of my question.
